You may have picked up on the fact that I’ve been a little frazzled lately. I’m not sure if it’s the stress of the holidays, the fact that I haven’t bought a single Christmas gift yet, or possibly the 13ºF temperatures, but I’m losing my mind a bit.
Matter of fact, I’ve been so scatter-brained lately that I went to Walgreens on Saturday to pick up some “deals” and completely forgot to bring my purse. The worst part? I did the same thing at Target the night before Thanksgiving. Ugh.
Unfortunately, this week does not hold much promise of getting better. Meal planning has fallen off the wagon again, despite my efforts to pick up the pieces. We had our annual cookie baking party (which I took absolutely no pictures of) on Saturday night, so we may just be eating cookies for dinner this week. Please don’t judge me. I don’t think my heart can take it.
By the way, if you have never heard of a cookie BAKING party before, lemme give you a brief rundown of the evening. Lots of people show up in your house with recipes in hand and bumrush your kitchen. Everyone starts fighting for the Kitchenaid mixer. Then 45 minutes later, there are 5 batches of cookie dough made but only 6 sheets to bake them on.
So, we drink wine and wait. I wander around aimlessly. Julie shouts “the oven is open!” and people dive on the scorching hot cookie sheets. Three hours later, people start itching to leave, but my cookies are still in the oven. Peanut Blossoms that need to cool before packaging or they turn into a melted chocolate mess. (Because I somehow always lose the fight for the Kitchenaid.)
But at the end of the entire fiasco, everyone gets to leave with a couple dozen cookies. I always feel the need to bake more afterwards, because it never looks like much. Thankfully it’s only once a year, because in 11 months I will be convinced that I will have a better plan this year and I WILL NOT lose the fight for the Kitchenaid this time.
Okay. Back to my attempt at salvaging a meal plan. Besides the abundance of baked goods, there is also a healthy amount of turkey tortilla soup leftover from the party because apparently no one wanted to eat it. Maybe it had something to do with the fact that I forgot the tortillas in the turkey tortilla soup?
I also thawed 16 cornbread muffins. 14 of which are still hanging around my kitchen. So, I’d imagine that some beans and cornbread will be on the menu for this week. Although maybe just for lunches since the hubs isn’t so much a fan of straight beans for dinner.
Besides that, I’m at a bit of a loss. I knew I should’ve bought ground beef at Aldi’s on Saturday. Then I’d have something simple to work with. But here goes nothing…

Wednesday: Dinner on the Go
Thursday: Chili & Cornbread
Friday: Baked Ham
