With a new month just around the corner, I will be starting a new meal plan from scratch. Well, not quite. We have several meals from last month that were skipped due to changes in plans, laziness, or just wanting something different. But I have to say that I loved planning out the entire month’s meals! My pantry is much better stocked (with useable ingredients) and my mind can focus on other things (like the 7+ backpacks I need to make for Allison’s birthday party) instead of worrying about what I can make that doesn’t require a trip to the grocery store. Because I hate the grocery store.
Monday: Stuffed Shells, Salad
Wednesday: Enchilada Casserole, Refried Beans
Thursday: Loaded Baked Potatoes
Friday: Breaded Tilapia, Steamed Broccoli, Rice
