I’m afraid that you guys may be getting a little deja vu this week… Again. You’ll notice that enchiladas are on the menu once again this week. Not because we’ve been eating copious amounts of enchiladas. Because we keep pushing it back.
That’s the reality of meal planning, though. Sometimes things come up. Sometimes you need to be flexible. Sometimes you just need to eat leftovers.
This week is full of quick and easy meals. Because we’ve got our plates full getting ready for a certain almost 2 year old’s birthday party. So, while the month long meal plan is great for stocking the pantry, it’s difficult to predict what kind of curve balls are going to require dodging.
Monday: Greek Take-out (because I threw my back out on Sunday… whoops)
Tuesday: Grilled Salmon, Peas, Rice
Wednesday: Beef Enchiladas, Beans
Thursday: Crockpot Chicken, Roasted Beets with Sauted Greens, Potatoes
Friday: Fish Tacos, Rice
I love to read other people’s meal plans. Besides getting new ideas and recipes, I enjoy seeing what other people are eating. The same reason I like looking in people’s carts at the grocery store. I’m a bit of a voyeur like that.
