Meal Planning Monday: Hungover

I have a serious hangover.

But not the alcohol induced kind.  (Unfortunately.)

It’s a food hangover.

Because my husband had been complaining lately that there wasn’t any leftovers in the house to take for lunches, I began cooking double (or triple) portions of everything we had for dinner last week.  Throw Easter lunch for 14 into the mix?  And my fridge looks like it’s gonna barf Tupperware if I try to push one more plastic container inside it.

So there’s not gonna be much cookin’ going on up in her’ this week.

Monday:  Leftovers

Tuesday:  Tuscan Open Skillet

Wednesday:  Girls Nite Dinner Date

Thursday:  Sloppy Joes, Cole Slaw

Friday:  More Leftovers

    Visiting from the blog hop. Your post makes me think…Don't you just love how husbands can create havoc! 😀

    When I'm in your shoes I try to come up with something creative to mush some of it together.

    Deviled eggs and ham may become Ham-y Egg Salad.

    Hope you get through the plastic jungle.

  3. This cracked me up! My husband is the exact opposite! He HATES leftovers! He would rather me make less food and then go make a PB&J than have them. The only things I can get him to eat for the next day are jumbalaya, chicken fried rice, and stir fry. Everything else is out the window – or in the trash rather. Luckily me and the boys LOVE left overs so I guess it makes up for it.
