I’m still recovering from the downward spiral that two too many martinis created on Friday night. Because going out drinking isn’t like it used to be. There’s no sleeping in the next day. No running out for greasy fast food cheeseburgers to ease your nausea. Just kids that don’t understand that all you want to do it sleep with your head on the toilet and a growing pile of laundry awaiting your return to reality.
Yesterday I was able to make up for most of the time I spent in bed Saturday watching Dora the Explorer. And this morning was filled with lots of bathtub scrubbing fun. Here’s hoping that I’ll be caught up by tonight because this week is going to be CRAZY.
So I don’t really have a meal plan for you this week. Because I’m not really going to be able to cook much this week. I’ve got some work events to attend and we also have plans with friends, so dinners are going to be a little unstructured.
But as part of my efforts to get my mojo back, I’m going to make a couple easy meals tonight that we can eat off of throughout the week. You know, to keep me out of the McDonald’s drive-thru.
This is what we’ll be eating this week…Chicken Fajitas (they were so good last week, I decided to make them again. With more leftovers this time.) Cowboy Casserole (I want to tweek this recipe a bit so that I can share it with you!) Veggies n Dip Cheese and Crackers BBQ Chicken Pizza
How do you get caught up after a day “off?”
