Meal Planning Monday

You know how most weekends are all, “can you believe it’s over already?”  Try potty training a 2 year old while you husband is out of town and you (and said toddler) are still recovering from a chest cold.   That’ll make you pray for the Rapture Monday.

But the weekend wasn’t all bad.  I got a lot done around the house without Matt around to distract entertain me.  I even cleaned (most of) the kitchen cabinets (for the second time since we bought our house 5 years ago).  Not to mention the usual weekend chores and even a little prep cooking.  I know, I’m awesome.  And exhausted. 

And potty training?  Is going great…  Since I introduced M&Ms.  I actually lost count of how many times she peed on the potty yesterday.  However, I think she was holding back a little so that she could earn more candy.  Crafty little girl….

I’m feelin’ pretty good about meals this week.  Yesterday I butchered 12lbs of bone-in chicken breasts, made stock with the bones, and cooked up a big batch of pasta sauce, so I have a lot to work with.  Not to mention an odd collection of leftovers still in the fridge that I’m trying to use up before they turn into science experiments.

Monday:  Homemade Cheese Pizza

Tuesday:  Southwest Crispy Chicken Wraps

Wednesday:  Spaghetti with Meat Sauce, Salad

Thursday:  Cajun Rice and Beans, Cornbread

Friday:  Leftovers

    Lol, I’m impressed you got so much done, esp. while sick-well done!! I myself am planning to tackle the potty training of my 2 y/o this summer and I’ve used M&M’s with great success in the past with my other kiddo’s.     Well, you sure accomplished a lot. This is a great menu week for me because I’m not cooking all week! We are at a student convention so are eating a wonderful variety of food. I could get used to this!

    I can’t believe you plan out your dinners for the whole week. How amazing is that?!

    All I have figured out is tonite. Chicken for us, salmon for him. Rice. Salad.

      Sounds good! Most of our meals are simple… I just pick a main dish and fill in with whatever is lying around the kitchen.

      Meal planning really did save my sanity. I’ve even been known to do an entire month long meal plan… It makes my OCD so happy.
