Meal Planning Monday

It was an exhausting weekend.  And I am tired of dealing with responsibilities.  More specifically, dealing with insurance companies.

First there was the hail damage 10 days ago.  And no more than two days after the damage appraisal on the car, what happens?  I get smoked pulling out of my driveway.

I won’t get into any specifics, however, I am fighting with the other driver’s insurance company trying to get a determination on liability.  Although using the word “fighting” would imply that I’ve actually gotten a hold of someone at Jim Bob’s Insurance. 

But life must go on.  And we must eat.  So here’s our meal plan.

Monday:  Leftovers

Tuesday:  Meatball Subs, Salad 

Wednesday:  Pretzel Chicken, Steamed Broccoli

Thursday:  Beef Stroganoff, Egg Noodles, Peas

Friday:  Going to a rehearsal dinner for a wedding Matt’s in this weekend.

      It’s a new recipe I’m testing. Essentially using crushed pretzels instead of bread crumb breading. If it’s a winner, I’ll post a recipe for it soon!

    That pretzel chicken sounds good! I’ve done it before where you mix spicy brown mustard (the kind you’d dip a pretzel in) with an egg, dip the chicken in that and then in the pretzel bits. Comes out yummy!

    I made my menu yesterday and have already had to deviate. Just swapping two days, my BIL is here for supper and hates Asian food, I had fried rice planned.

    Insurance companies are never fun to deal with!

    I keep hearing about pretzel chicken, but I’ve never made it.

    Sorry about that fender bender. Insurance companies that don’t call back are no fun. Take that as a sign if you get no calls within another day and file through your insurance and have them sicced on the other party.
