Meal Plan Monday ~ 10.3.11

What is it about September and October that keep me so busy?

Is it the change in weather?  The abundance of fun Fall activities? 

I don’t know, but there always seems to be a lot to do in those two months.  And this year is no exception.  We’ve had a yard sale, gone to a music festival, attended the balloon glow, been apple picking, ridden a miniature train, had a close call with some pirates, and visited the pumpkin patch all in the last four weeks.

Add to that my overwhelming need to bury myself under a mountain of dirty dishes cooking elaborate comfort-food meals and I’m exhausted.

And October is slated to be just as full with my company picnic, Oktoberfest, the wedding of a close friend, a couple of birthday parties, and (hopefully) our annual Halloween party.  I’m not quite ready for the cold weather yet, but in a way, I’ll be happy when we get a break in our social calendar.

I’ve just got to hang in there a few more weeks and hope that my Crohn’s doesn’t get super pissed off in the meantime, as it tends to do when I’m super busy.  {fingers crossed}

So if I have any hope of surviving with my gut in tact, I need to plan out some quick, easy, and healthy meals.  Otherwise, there will be repeats of Saturday.  Which entailed 2/3rds of a bean and cheese quesadilla and cheese and crackers.  Oh yeah.  And half a bowl of oatmeal at 11 o’clock because I felt bad that I had only eaten about 600 calories.

The plan for this week…

Sunday:  Orange Chicken, Brown Rice

Monday:  Grilled Cheese, Tomato Soup

Tuesday:  I’ll be busy doing wedding prep, so Matt will probably eat leftovers

Wednesday:  Meatloaf, Roasted Potatoes & Carrots

Thursday:  Chicken Curry, Brown Rice

Friday:  Company picnic, but I’ll probably feed Allison in advance something snacky

Saturday:  Oktoberfest for Matt – Allison and I will be hanging out at home since we’re not big beer drinkers.
