What? It’s Monday again already? I guess that shouldn’t come as a shock to me as I’m still recovering from my weekly beating from a baseball bat. So, let me take a moment to remind myself that this weekly injection keeps me seeing straight, walking steady, and talking (somewhat) coherently.
Good thing I have an easy meal plan this week. Mostly because I decided I didn’t want to cook Wednesday thru Sunday. So, I have a stock pile of bumped menus to recycle. I’m so green.
I am also thinking about trying to plan some additional meals for the week. This would serve two purposes. 1) Giving us a little variety in the house in case we don’t feel like tacos AGAIN and 2) Having a plan for those rare times when Matt actually gets a weekend off. Because I can confirm that eating leftover tacos in some incarnation for five days will drive you loco. However, since Allison’s diet consists solely of cheese and tomatoes, it suits her just fine.
Additionally, because I grocery shop most often on Friday nights or Saturday mornings, I’m going to start my meal plan week on Saturdays. Not that I really cook on the weekends. But it makes me feel better when I’m writing my shopping lists.
Sunday: Leftover Bread Company (or Panera for all you out-of-town folks)
Monday: Pasta with Pesto
Tuesday: Shepherd’s Pie
Wednesday: Broccoli Cheddar Soup (Yes, this has been on the menu for the last 3 weeks. I swear, I’m gonna make it this time.)
Thursday: Pretzel Chicken, Glazed Carrots
Friday: Leftovers or Hot Dogs
