It happens every year. No matter how much I prep and plan, I can’t avoid it. And right on schedule, I felt the panic set in today.
Less than a week until Christmas and I. Still. Have. So. Much. To. Do.
No matter that I have already accomplished so much already, because I still have (a couple) presents to buy, crafts to complete, and goodies to make.
And those last 10 tasks are STEALING MY SOUL.
So, if I’m not around much this week, it’s probably because I’m sequestered in a small dark basement addressing Christmas cards or permanently stuck to my kitchen floor with marshmallow fluff.
For as much as I’ve said “No” to this season, I’ve said “Yes” to twice as many overly ambitious craft projects. Because I am defined by my ability to create holiday magic from wood pulp and gelatin. And I’m sure everyone will FINALLY UNDERSTAND THE MEANING OF CHRISTMAS as a direct result of the most spectacular Christmas card designed ever. Or not. Because most people won’t appreciate the amount of time and Starbursts that it took me to get a remotely photoshoppable picture of my kid. Or the amount of gas I used in search of 5×7 envelopes.
So here we are in the home stretch. I have twelve things remaining on my to do list. Eight of which I can guarantee will get scrapped at 11:39pm on December 24th. As well as most of the routine tasks I have to accomplish on a regular basis. Like dinner.
But never one to admit defeat, I STILL have a meal plan. And even though it has already been distorted by an unexpected day off for Matt and a lack of salsa, we will carry on and hope that we have enough hotdogs and tortillas to get us through the first set of holiday celebrations.
Sunday: Rotisserie Chicken (from the grocery store), Mashed potatoes, Corn
Tuesday: Mongolian Beef*, Rice
Wednesday: Pasta with Marinara Sauce
Thursday: Chicken Fajitas
Saturday: Xmas Eve with the family- I am contributing a dessert and appetizer TBD
Sunday: Pork Loin*, Sides TBD
