Meal Plan Monday ~ 2.20.12

You’d think after a couple lazy weeks in the kitchen and a long holiday weekend I’d be all recharged and ready to kick some culinary ass.  But not so much.

I did attempt to bake sandwich bread yesterday in an effort to stay out of the grocery store.  But I was out of AP flour and 100% whole wheat bread has the density of a brick and the loaves were about as flat as one, too.  It all worked out though because I sent Matt to the store and he picked up ice cream, too.  (Read: I sent him out for ice cream and remembered the bread as he was in the check-out.)

I also bought a $10 free range chicken at Trader Joes and roasted it last night but once I saw the mess from roasting said chicken, I began regretting it.  Although I do have to admit it was pretty delicious.  I love me some crispy chicken skin and you just can’t get that from the crock pot.

And I still have that applesauce to make and celery to process for the freezer.  Plus we’re about out of yogurt, so I guess I better get to work. 

Funny how those three tasks are so simple but I. Just. Can’t. Make. My. Self. Do. It.  If only I had someone who cleaned up after me.  I’m sure that’s what is stifling my culinary genius.

We do have quite a few leftovers currently in the fridge and some things in the freezer to eat through, so it’s going to be another easy week at Chez DMB.

Sunday:  Roast Chicken with Potatoes and Carrots

Monday:  Broccoli Rice Chicken Casserole

Tuesday:  Tacos with Refried Beans

Wednesday:  Butternut Squash Quinoa Stew (from the freezer)

Thursday:  Leftovers

Friday:  Fish Fry

Saturday:  Balsamic Pork Loin and Mashed Potatoes (from freezer)

    I live Frugal Girls wheat bread. My bread always came out too dense until I tried her method.

      Yeah, I used FG’s sandwich bread recipe with the substitution of whole wheat flour before realizing that she has a seperate recipe for whole wheat bread. Oops. I will say that my bread still tastes good. It would just make little sandwiches. :)
