My kitchen and I aren’t the best of friends these days. I’d like to say it’s holiday burn-out, but the reality is that I hardly cooked over the holidays. So we’ve pretty much been eating tacos, pasta, and take-out these past few weeks. No bueno.
I know that having a plan gets me halfway there, so here we are back to Meal Plan Monday. And to increase my odds of success, I am focusing on crockpot meals. Because even when I’ve had a plan lately, I’ve had trouble finding the motivation to pull out the pots and pans. So this way all we need is a few simple ingredients and plates. Hopefully I can handle that.

Monday ~ BBQ Chicken Pizza
Tuesday ~ Crunchy Chicken Nuggets, Clementines
Wednesday ~ Crockpot Pork Roast (I am using some variation of this recipe)
Thursday ~ Crockpot Veggie Lentil Stew, Quinoa
Friday ~ Roast Acorn Squash, Whole Wheat Pasta
Saturday ~ Beet Risotto
Sunday ~ Beef Stew (from freezer)
My recent laziness in the kitchen also means there is a lot of prep cooking to be caught up on: Yogurt, Stock, Refried Beans, Muffins, Salad Dressing. Most likely it will not all get done this week, but at least I have an idea of what we need for meals in the upcoming weeks. And I get to use my new immersion blender on the beans, so that’s motivating… right?
