I didn’t really cook much last week since we were busy nearly every night. I think I made some cheeseburger macaroni and I did finally get around to baking that ham over the weekend. My freezer is thankful because while we’ve eaten through much of the meat in the freezer, that ham was taking up A LOT of space. Now if I could only find a use for all those random pig parts…

Monday ~ Bean and Cheese Quesadillas
Tuesday ~ Crockpot Lentil Veggie Stew (from several weeks ago that still hasn’t been made)
Wednesday ~ Ham and Cheese Omelets
Thursday ~ Pasta e Fagioli (I’m hoping this recipe will be close to the soup I had in Venice that still haunts my dreams)
Friday ~ Parmesan Tilapia, Rice, Peas
Saturday ~ Braised Short Ribs, Cheese Polenta, Carrots
Sunday ~ Ham Bone Soup
